Perfect as a winter warmer – absolutely delicious!
2 tbsps coconut oil
2 chopped onions finely chopped
3 chopped carrots finely chopped
1 large bag chopped kale
3 cloves crushed
3 x organic vegetable stock
Melt the coconut oil and dry the onions and garlic. Add the carrots and fry for a few minutes.
Add the kale and the vegetable stock, use enough water to cover the veg and simmer for 20 minutes.
Blend to a smoother consistency if preferred serve with a swirl of sour cream and chopped parsley.
